Living with food allergies definitely requires adjustments. When we first found out our son (4 yrs ago) had 20+ food allergies, I was completely overwhelmed and quite honestly wasn't sure how or what to eat. He has outgrown some allergens and these posts are mostly going to be a daily update of "What's for Lunch." He currently is allergic to and we avoid: DAIRY, NUTS, EGGS, PEANUTS, WHEAT, SHELLFISH

Allergy friendly lasagna
I found GF lasagna noodles and sautéed ground turkey w typical Italian seasoning. Then I sautéed added sweet corn (frozen) and layered it w Spag sauce. On one small section I added the soy crime cheese (I hear they make a ricotta sub but this was fine w the cream cheese.
On top we out daiya cheeses. It was so good!!! B

Football Krispies
Super Bowl Sunday, needing to bring something allergy friendly for our kids to the neighbors Super Bowl party...
I saw a picture on "parents of kids with foods allergies" Facebook page of football shaped treats.
The ones they made appeared to be in an egg shaped mold, I tried an Easter egg plastic mold and that didn't work. I just pressed them down flat overnight and following day used a large spoon as a press to make into shapes of footballs.
I used the typical Rice Krispie treat directions (subbing w vegan butter) and I added Hershey's dark chocolate syrup to the warmed up marshmallows to make them brown.
Super easy treat!!

Lunch
I made some popcorn balls w safe margarine, popcorn (I found a trick on Pinterest to make popcorn in microwave w just a brown paper bag!) no chemicals!! Anyway, I also added marshmallows and Craisins w vegan chocolate chips.
Plus for lunch he also had frozen corn, carrots, lunch meat.

Haven't posted in awhile, mostly been repeating lunches from past pix. Thought I should post something for days we just have rolled up lunch meat. Sometimes w GF it can be tough getting a grain into the lunchbox. Today we did the Crispix cereal.
I was pretty excited to find these fruit snacks w.o any artificial colors.

Monday/donuts!
It's been awhile since I have posted a lunch, I think after 2-3 months, felt I was probably going to be boring and more repetitive...
But here's to a new yr!
First day back to school and he was excited to have a donut. Over the winter break, I made about 40 donuts that I mostly froze, they are baked! It's basically a muffin tin w a shape of a donut, although I make the same in the shape of a muffin, it's def preferred in this fun shape :)
I used the Betty Crocker GF cookie mix and I tend to increase recipes by 1/3 by adding just about 4 heaping scoops of flax ground seeds. I stir well and then add water to make appropriate consistency for baking. Lately I have also switched to subbing one of the eggs for sweet potatoes purée. I keep it simple and buy baby food jars and call one jar/ one egg. Then if recipe needs more eggs, I call it even w all that flax :)
Anyway lunch.
